Cyber have you tried ADW launcher EX. I'd been using Launcher pro for ages, but after trying ADW EX the launcher seems to be a little quicker.

I tried it, but it just wasn't as fluid as LauncherPro on my phone.

So I'm using 3 screens

I'm currently using GO Launcher, before I was using ADW and a while back I was using Launcher Pro. I change my theme every few weeks. But the layout of icons/widgets doesn't really change.

Here's mine, it doesn't deviate far from the standard HTC Sense one, (although I took the large date/time/weather widget off the home page).

My wife and dog are my background, (she's also shortcutted on the desktop; I have to call her when I'm driving sometimes, the speaker phone icon is directly 'behind' her icon, so I just double tap to call and speaker phone her)

That's mine after a day or so of playing around. Pretty sure it's final, though I'm not sure about the weather widget. Thinking about changing the wallpaper, just dunno what to.
